The cold draw is still that hit of cocoa powder from the tin. Then the toro takes its time. Dark chocolate, pear and espresso settle into a full mocha through the first third, ripe red grapes and caramel arrive as a proper middle act rather than a passing note, and the last third holds a long pastry cream finish with the flake of puff pastry behind it, pure pain au raisin.
